Vegetables nutritionToday we are going to discuss a very special vegetable that I really like. it’s orange, sweet, hard, and liked by rabbits (well, I’m not really sure about that part being true or just an “urban legend”). Yes, you guessed right, we are going to talk about carrots! (well, it’s written in the header, “vegetables nutrition….” so i guess it wasn’t to hard to guess).

anyway, I love carrots, and for multiple reasons. First, they are straight out delicious. second, they are great for preparing nice dishes, as they could be steamed, cooked in a pot, baked in the oven, stir-fried, eaten raw, shredded in salads, and even mashed as a pureé. the third and maybe most important reason I love carrots so much is their nutritional values, which we will discuss here. amongst others, carrots are rich with C, K, and A vitamins, it’s got potassium and manganese and a lot of dietary fiber.

Vegetables nutrition – Carrots are great:

being low on calories, yet so sweet and rich in flavour, makes carrot a nutritional add-on to our vegetables nutrition based diet and to any meal, and could be a great source for vitamins for kids, who sometimes don’t really like to eat grown-up’s food.

It is very common to think that carrots are good for our eyes. well, it is true! beta carotene, the most common form of carotene, transforms into vitamin A in the liver and then, through a complex route benefits our vision, especially night vision. it’s rich fiber content makes carrot beneficial for digestion, and there for helps to promote our colons health (as we have learned in prior posts).

vegetables nutrition – healing with carrots:

In Chinese medicine it is said that carrots benefit the body for a variety of imbalances ranging from spleen-stomach weakness, through sexual dysfunction and all the way to strengthening the kidneys. The way carrots easily digest, yet carry nutrients and strength to the body, makes them good for the sick. After fasting, for example, it is common to break the fast with cooked vegetables, especially carrots.

carrots, ladies and gents, is one of my all-time-favourites and for a good reason. let’s give it the respect it deserves and remember to give it the space on the plate of our vegetables nutrition based diet meals.
